Our Indian Chef presents specialties from his homeland in a set menu revealing their rich and exotic flavors; a colorful and spicy alternative to delight vegetarian guests and foodies with a taste for international cuisine. Chef Sanjay is also available on request to cook for our Indian and vegetarian guests throughout the week.

On Wednesday evenings, Executive Chef Olivier Fajol presents exquisite Polynesian fare – from Poisson Cru, the Tahitian national dish made of raw tuna marinated with coconut and lime, to locally caught grilled fish, flambéed fruits and more – to go along with the Polynesian Evening Show. That spellbinding show begins at 8 p.m. and includes the traditional Tahitian Tamure dance, accompanied by ancient Toere drumbeats.
